You'll never [or very rarely] see the number go down; LINUX memory management doesn't work that way. I'd say these numbers aren't too bad - the one that really counts ( "RSS" - resident ) is pretty low. But it does seem like gnome-shell's virtual footprint grows considerably; mostly this look to be memory allocated for data [ "VmData" ]. Note that I have several extensions enabled which may drive up the numbers.
