The (highest) multiplicity of the beam.  So 0 (=0 beams) is not used.

That's hard coded.  See lily/stem-info.cc.  Grace notes are excluded
from this mechanism.

it happens to point in an unnatural direction (eg, all upward stems
of notes that are above central staff line).
