Someone actually created an AppImage repo for GnuCash at https://github.com/ecmu/gnucash.AppImage
It seems pretty fresh. The release available there is 3.4. The title says "Continuous Build", and it builds to the latest (.tar.gz) released sources. It looks a bit funny, probably minor GTK issues. It crashed once on opening the sqlite database so beware.
