Anton, You will find the GnuCash Tutorial and Concepts Guide (https://www.gnucash.org/docs/v3/C/gnucash-guide/index.html) helpful in explaining how GnuCash works. GnuCash is a full double entry accounting system. In many other commercial products, the double entry nature, while often present, is not explicitly visible to a user, but in GnuCash it is. The introductory sessions of the guide will give you the basic information you need about how transactions are recorded in GnuCash and the basic accounting concepts. There is also a Help manual (https://www.gnucash.org/docs/v3/C/gnucash-help/help.html) which is more interface and feature oriented. Often very recent changes will be documneted in the wiki pages (https://wiki.gnucash.org/wiki/GnuCash) and or the archives of this mailing list.
