They even all use the GTK toolkit for drawing the UI. (though not always the same version across all platforms)

As for the web server idea, see the RoadMap on the Wiki. GnuCash is not at present following the MVC paradigm or even an 'proper' database application. Work is being done, but it will be several more years before that is even a glimmer in someone's eye.
