I do not fully understand your question. When you are editing a transaction (in Autosplit Ledger or Transaction Journal view) there is an extra split line at the bottom of the transaction where you can enter an additional memo with whatever transfer account that you care to assign.
As for rearranging the order of the fields, the structure of the transaction view is fixed left to right and cannot be changed.
