Works fine in Windows or Linux (Mint in my case) using the same file. In fact, I access the file freely using both operating systems, so if you're moving to Linux just copy the files (probably, the whole data directory) from Windows to Linux and proceed.

The main caution is that the Mint repository version of GnuCash may be old; the Windows version always seems to be the latest. A few point versions difference usually doesn't make any difference, but there's always a chance for incompatibilities (they've happened to me in the past), and there are occasions when there are significant bug fixes. You need to look for how to get the latest version on Linux. I think my copy is installed with Flatpack, but it might also be done using a different repo than the standard Ubuntu one Mint uses. You should not need to do a full compile-from-source with Mint (Ubuntu).

I'm moving to go from Windows to Linux Mint... if gnuCash will open my 
".gnucash" file.

1 - Will the "mystuff.gnucash" file open and work without issues after I move 
from Windows to Linux Mint?
2 - Or can I expect some issues?

PS- I already have Linux Mint working on another computer so installing gnuCash is my 
next step...- then copying our ".gnucash" accounting file over to the Linux 
Mint computer will be our next step...- unless there are issues with continuing the 
original .gnucash file with all our accounting history it it.
