Since GnuCash is open source, you could potentially fork a copy and write your 
own fields, but there is nothing in the user facing application that allows 
data structure changes. Neither would I expect any development in this 
direction. 

Perhaps you could provide a little more information about what you are looking 
to add, and folks on the list might have alternatives for you.
