You can't? It's documented near the top of gpg's man page :)

gpg -se -u 0xdecafbad -r 0xdecafbad -r 0xdeadbeef somefile.txt

Signs somefile.txt with 0xdecafbad and encrypts the result to both 0xdecafbad
and 0xdeadbeef
