Well, you MUA does it already. The IMAP server of your provider also has this information, and, worst of all, your responsible surveillance agency has this information at their fingertips. Protecting mail meta data is pretty hard and close to impossible if you do not want to leave traces on your local machine. For high security areas Tofu is definitely not an option.
