Panchamrut - Hot and sweet sauce 1/4 kg. sesame seeds, 100g. peanuts, 50g. cashew nuts, 50g. dry coconut, sliced fine, 25g. green chillies, chopped, small ball of tamarind, 1/4 cup of jaggery (1/4 cup of dark brown sugar or palm sugar can be substituted), 1 1/2 teaspoon coriander, cumin powders, 10 g. chili powder, 3 red chilies, cut into pieces, 1/4 teaspoon mustard seeds, 1/4 teaspoon fenugreek seeds, a pinch of asafoetida, 2 springs curry leaves, salt to taste, oil Roast the sesame seeds on a tava over low heat for 10 minutes. Remove from the heat and grind into a powder. Mix this powder with two cups of water and set aside. heat oil and add mustard seeds, when they crackle, add fenugreek seeds, cumin seeds, chili powder, asafoetida, curry leaves, chili pieces and turmeric powder. Add sesame mixture and stir well on low heat. Extract tamarind pulp and add to the mixture. Add salt, jaggery, coriander/cumin powders. Stir well and simmer on low heat till the jaggery has melted and the consistency is fairly thick. Cool and store in the refrigerator. Before serving, stir in peanuts, coconut slices and cashew nuts which have been fried in a little oil.
