Here are 2 delicious potato salad recipes that you will surely like to try out. Rich Potato Salad : - 1/4 cup olive oil, 2 tablespoons vinegar, 1 1/2 teaspoon salt, 1/8 teaspoon pepper, 4 cups potatoes, sliced, hot and cooked, 1 cup ripe olives (chopped), 2 hard boiled eggs (chopped), 1 cup celery (chopped), 1/4 cup dill pickle (chopped), 1/4 cup pimento (chopped), 1 small onion (chopped), 1/2 cup mayonnaise In a small bowl whisk together oil, vinegar, and pepper. Pour dressing over hot potatoes; set aside to cool. When potatoes have cooled, add remaining ingredients. Chill for a least 1 hour before serving. The next recipe is an Indian version of potato salad. This dish is best eaten with pooris (puffed Indian bread) or even on its own. Potato Bhaji - 4 potatoes, 1/4 tsp mustard seeds, 1 onion cut into long chunks, 2 green chillies, 1/2 tsp curry powder, salt to taste, 1/2 tbsp oil Boil potatoes and cut them into medium size chunks. Put oil in a pan and when it is hot, toss in mustard seeds, onions and green chillies. Saute for 2-3 minutes until onion browns a little. Now add salt, curry powder and potatoes.
