This elite exists on either side of the simple equations that we like to pose, for example, Goan vs. non-Goan. The native or blood Goan is as deeply implicated in the exploitation of the economy and population as the non-native Goan, or the bhailo. Whichis why it is most disturbing when time after time, it is the migrant worker in Goa that is singled out by Goans who feel threatened and swamped by the huge changes they are seeing around them. The migrant labourer is as much the victim as the Goan who rightly feels a sense of loss and deprivation. If we only look deeper, we realise that the migrant works under abysmal conditions and leads a wretched life in Goa, even if marginally better than the one s/he would lead in her place of origin. Berber cooking is characterized by stews of lamb, poultry and vegetables. The Turkish and the Arab influences are seen in use of many spices and the creation of special pastries. Have you ever cooked coucous before, I tried it and now I am hooked. Here is a an easy recipe that uses couscous. Chicken Couscous 2 to 4 tablespoons of oil, 1kg chicken (cut into pieces), 750 ml chicken stock, 3 carrots(chopped), 2 onions(coarsely chopped), 2 turnips(chopped into small pieces), 3 cloves garlic(finely chopped), 2 teaspoons ground coriander, 1/2 teaspoon ground red pepper, 1/2 teaspoon ground turmeric, 3 zucchinis(sliced), 500 ml cooked garbanzo beans, 1 kg couscous (cook according to directions on package) Heat oil over medium heat in a large pan. Add chicken pieces and fry until brown, about 6 to 10 minutes. Remove and set aside. Add stock, carrots, onions, turnips, garlic, coriander, red pepper and turmeric to the same pan. Bring to a boil over high heat. Reduce heat to simmer. Add zucchini, beans and chicken. Cover and cook very slowly for about one hour until chicken is tender. To serve: Heap the couscous in the middle of a platter and surround it with the chicken and vegetables. Very colorful and tasty. What is couscous: Couscous is a coarsely ground semolina pasta. It is made from 2 parts of semolina, 1 part of flour, salt and water. Some handfuls of semolina are put on a plate or on the ground, after which it is moistened with saltwater. What results is molded in the hand, as flour is added. Gradually small "grains" of couscous are seperated. After performing this process until the right size of the grains is achieved, a bit of oil is added.
