Dear Sanjay Sircar, I can think of 'filloss' [with jackfruit pulp] and 'banana fritters'[with over-ripe banana] made the way you want your pancakes. The pancakes can be made without the fruit, but would need some essence/flavouring agent to make them interesting[except if your diet is boiled chicken and potato mash or equivalent].
Alle belle,as I like them ,have a filling of grated coconut with grated coconut jaggery. Alternately,we have 'guardanappe',where the pancake is folded into a quarter and dipped in coconut milk. As kids, we ate them with sugar instead of sweetened coconut juice/milk[specially if the latter was not yet ready, and it was time to play football]. That is not the way it is supposed to be.They have similar pancakes in Kerala and Tamil Nadu, both coconut and rice producers. You will most likely get some more interesting ideas/recipes from expert cooks on the goanet. I can cook if needed but, like most goanetters , I am a better critique. It is a very natural Goan forte!
