They particularly love to pound the chicken into cutlets and of course the eating part. Chicken Fingers 3 chicken breast halves, skinned and boned 1 egg 1/2 cup of seasoned bread crumbs 1 tablespoon butter, melted 1/2 tablespoon fresh lemon juice Ketchup or honey or barbeque sauce for dipping Pound chicken into thin cutlets between sheets of plastic wrap with a mallet. In a bowl, beat the egg. Dip the chicken into the egg and then into the breadcrumbs. Arrange the chicken cutlets into a non-stick baking dish and drizzle each one with melted butter and lemon juice. Bake at 350 degrees for 20 minutes or until golden. Tip: Sometimes I like to add some shredded Parmesan cheese in the breadcrumbs to give it some extra flavor. Also, sometimes, I put a small skewer through the chicken cutlet before baking (make sure you soak the skewers in water for about 20 minutes before baking), these are known as chicken lollipops.
