Make the masala. Grind all the ingredients except the salt to a thick paste in a blender, adding a little water. Add salt to taste. Pierce the chicken thighs with a fork and rub the masala liberally in to them. Cover and leave for at least 3 hours, preferably overnight, in the fridge. Heat the oil in a heavy based frying pan set over a medium heat. Place the chicken in it skin side down and allow to brown slowly, shaking the pan gently so it doesn't stick. When golden, turn over and continue cooking until the chicken is done. Transfer to a dish and keep warm in a low oven. Return the pan to the heat and add the onions, ginger, green chili, turmeric, cumin and coriander. Sauté until the onions are browned, then stir in the coconut milk and simmer for 10-12 minutes until the sauce has a pouring consistency.
