Ingo's market planned shift to Assagao in the news. Saturday
Nite Bazaar, a tourist-oriented event wanting to shift to
Assagao (from Arpora) is in a controversy. Gomantak Times alleges
that voting over the issue at a village council (gram sabha)
meet was "allegedly rigged" to secure a 26-vote margin in
favour of the "controversial project". Herald says, "Ingo yet
to pay Arpora village panchayat taxes". It also adds that the
Assagao residents have "resolved to fight the challenge of the
Saturday Night Bazaar", a concept that was started by the
European visitor Ingo, and which gained considerable popularity
when run at Arpora, though villagers in Assagao fear its impact.

QUOTE ... UNQUOTE Mario Cabral e Sa
-----------------------------------------------------------------

But I am the only Goan who witnessed the final end of the Portuguese era
in India. No tautology, rest assured, in my phrasing it as the 'final
end', because the Portuguese Oriental Empire of India had been losing
bits and pieces at different periods of its history which in some ways
was brilliant, but was generally dreary when not tragicomic. Mario
Cabral e Sa in an edit-page comment titled 'The end of an era' [GT] It
says Dr Abel Regalado Colaco, a Goan from Margao, came to Chicalim to
meet Governor Vasallo e Silva at his provisional camp, to plead he
surrender. Major Antonio Areias Peixoto, backed by a handful of
like-minded young leftist officers, says Cabral e Sa, told the Governor,
"Waiting for what, my General? The radio station has been bombed out,
and there is no question of you contacting Lisbon or of Lisbon
contacting you. You are now the final authority. These people (Goans)
are at no fault because we can't defend them. Let us leave happy
memories behind us." By nightfall the General decided to surrender, and
had reached his final transit camp at Hotel Rebello, Vaddem.

CULINARY CORNER *** From Daisy Rodrigues [EMAIL PROTECTED]
-------------------------------------------------------------------

Here are two of my favorite chutneys. I like to serve chutneys over
toast as a snack or it can be served as a yummy accompaniment to any
meal.

Mango Chutney

4 tablespoons malt vinegar, 1/2 teaspoon crushed dried chillies, 6
cloves, 6 peppercorns, 1 teaspoon roasted cumin seeds, 1/2 teaspoon
onion seeds, salt to taste, 3/4 cup sugar, 1 pound green (unripe) mango,
peeled and cubed, 1 piece fresh ginger, finely sliced (2 inches long)

In a saucepan, heat the vinegar with the chilies, cloves, peppercorns,
cumin and onion seeds, salt and sugar. Simmer until the flavors of the
spices infuse into the vinegar, for about 15 minutes on a low heat. Add
the mango, ginger, garlic and peel, if using. Simmer until the mango is
mushy and most of the vinegar has evaporated. When cool, pour into
sterilized bottles. Leave for a few days before serving.

Q: What is the difference between malt vinegar and any other vinegar

A: Its a vinegar that is made from unhopped beer!(Barley and corn malt)
There are many uses for it. People sometimes use it for pickling. Heinz
sells a great brand of it. Its available in grocery stores in the
condiment aisle with the ketchups and other vinegars.

Totomato Chutney

6 tablespoons vegetable oil, 1 piece cinnamon stick, 2 inches long, 4
cloves, 1 teaspoon freshly roasted cumin seeds, 1 teaspoon nigella seeds
(black cumin), 4 bay leaves, 1 teaspoon mustard seeds, crushed, 4 cloves
garlic, crushed, 1 piece fresh ginger(2 inch long, crushed), 1 teaspoon
chili powder, 1 teaspoon turmeric powder, 4 tablespoons brown sugar, 1
3/4 pounds canned, chopped tomatoes, drained (reserve liquid)

Heat the oil over medium heat and fry the cinnamon, cloves, cumin and
nigella seeds, bay leaves and mustard seeds for about 5 minutes. Add
garlic and fry till golden. Add the ginger, chili & turmeric powders,
sugar and the reserved tomato juices. Simmer until reduced, add the
tomatoes and cook for 15-20 minutes. Cool and serve.
