I had explored briefly and out of curiosity, when last in Goa, about where all the Goan waiters had gone? What you said by way of an explanation is probably correct. There is a movement 'upwards' socially for many a Goan or outwards where being a waiter is OK on a cruise liner or on a Caribbean island but not in Goa for example. Also better wages are an important consideration for any migratory process. One hotel owner said to me that he could not get Goan waiters and that as local Catholics, they expected time off for family funerals, weddings etc. This, he said, was not a problem with the more docile 'imported' labour from Bihar etc. However if you think they are being deliberately displaced this may be debatable. Often, newcomers come into a market precisely because there is space or a vacuum. In turn, a new group encourages others they know, to follow suit and there is a form of chain migration. Your kind of question has echoes of mine in the UK. Where have all the white workers gone? The evidence is that, by and large it is for better jobs especially where there are no long anti-social hours to put in. In turn, after a while, the newcomers become upwardly mobile themselves and even more newcomers are required in the labour market especially if it is buoyant. The bus conductors on London's red buses were entirely white at first. Gradually, they became black from Afro-Caribbean migration. Then Indians and turbaned Sikhs featured. Next came the West Africans and most recently, Somalis, Ethiopians etc. Of course, with advances in technology today, virtually all bus conductor jobs have become obsolete. However, I won't pretend I know all the answers to the interesting changes we have both observed.
