BOOK BROWSE Masci: the man behind the legend

     Not many of the younger generation of Goans would have
     heard of Miguel Arcanjo Mascarenhas, who starting as a
     humble kitchen boy rose to become one of the most
     renowned chefs the country has produced.

Hailing from a poor family from Anjuna (Goa), circumstances
forced 14-year-old Miguel to leave home for Bombay in search
of work. 'Below age, uneducated, no parents to guide him, a
family waiting for food back home', is what would best
describe his situation then.

Taking up a temporary job as Assistant Cook -- which in
reality amounted to being a glorified kitchen helper --
Miguel began his illustrious career by scrubbing kitchens,
cleaning drains and doing other menial tasks that were thrown
at him. Did he give up? Obviously not (we wouldn’t be writing
about him if he did).

Importantly, he had two things firmly in place: his attitude
and his dream. The rest, as they say, is history. And for
those wanting to know more, Masci: The Man Behind the Legend
will give an excellent account of the lives and times this
celebrated chef of the Taj Group.

Not only does he serve as a model for so many of our youth in
the catering line, but the attitude of the man who catered to
the world’s Who’s Who is something that every Goan can learn
from.

     Odette Mascarenhas, the author of Masci: The Man Behind
     the Legend, being Masci’s daughter-in-law, was able to
     cull some of the rare details about the culinary genius.

Consequently, the book not only presents the chef behind the
menu, but also the menus of the great chef! Fifty recipes
“literally from the hand of the genius” are an appetising
bonus to the book. What are the recipes about? Well, that
will be akin to merely describing one of Masci’s
masterpieces, rather than serving the real thing.
