Dear Roland the staple qua non of all these books (Can I get a place in the Oxford English Dick for staple qua non :) I own at least a dozen such books. Just ask someone coming to Goa to carry a dozen or so back with them for you.
If you diligently follow these recipes which give quantities and process and pictures or / and experiment a little with the basic recipe, after a while you will surely hit at your own gourmet Goan fish / prawn curry. Call it Goan Fish / Prawn Curry a la Roland to get that extra special taste and serve it with lots of tomato ketchup. Hope you get it right. Best, Augusto
