Dear Roland There are two brands recommended by E at the I Shop Indian site. Parampara is below par for fish/prawns Shan Fish Spices marginally better Shan makes a Nihari powder which is excellent. It is available in Indian shops all over the major US and Canadian cities. They normally cell at 67% of on line prices. The recipe is fairly simple. 1: Decide that you really want to cook. 2: Purchase Shelled and Deveined Prawns (13-16 size uncooked are great). 3: Defrost a few...sprinkle Salt and Pepper...Cover and keep in fridge for 2 hours 4: Chop a large onion; also have ready chopped Garlic and Cilantro (or pastes are available in fridge section of supermarkets) 5: Find a decent size pan with a cover (Or run out and get one) 6: Locate some Canola oil (Or run out and get some) 7: Switch on your cooking range (Usually in the Kitchen) - medium heat 8: In the pan...pour a tablespoon of Canola 9: Add the Onions and Garlic ...Cook till medium yellow 10: Add a table spoon of Nihari and fry; Add 1 tablespoon of tomato paste 11: Add the prawns and cook for about 2 minutes before turning them over 12: Cover and cook for another 3 minutes 13: Add Cilantro and mix gently for a few times If you like the taste ...fine If not....for the next time...Get Some Bread and Butter (:-) jc
