Dear E DeSousa

Glad you mentioned the Shan range of products in your goanet posting.

Not tried all of them but I certainly have to have their Zafrani Garam Masala,
I find it one of the best on the market.   The packaging for this product is
slightly different in the UK (it comes in a white packet with a spice ladel on
the front) compared to that shown on the website you posted but the name is the
same.   It is especially excellent when making meat cutlets.

For those budding chefs out there here is a quick receipe, in a large bowl put
in beef mince meat add finely chopped onion (one medium), ginger (one inch),
garlic (three pods), green chillis (to taste), fresh coriander (a handful not
the whole bunch), salt (to taste), pepper (half teaspoon) and Goa coconut
vinegar OR malt vinegar (one tablespoon) and Zafrani Garam Masala (two or three
level teaspoons).  Mix all the ingredients well and place this in the fridge
overnight for the meat to soak up the flavours.   (You may use a little bread
soaked in water, then the water squeezed out and mixed in with the mince but I
do not bother to do this myself).   The easiest way if you have one of these
small chopper/grinders is to put in your onion, ginger, garlic, green chillis
and fresh coriander and use the chop setting.

Next day, make small round flat patties on a floured board, coat in beaten egg
and breadcrumbs and fry in shallow hot oil, the pan must be on very low heat so
that the meat cooks through.
