This presentation is about foods that mark the Indian Ocean palate -- for example, the lowly crops that became commodities (rice), spice elements, fruits (coconuts, mango) -- and how these foreign and often suspicious temptations were transported around the world and eventually changed not only cuisines but the very fabric of human life on the planet. Many works have been written on each and every food topic this presentation aims to address, but other sides of the story of the tastes and smells that shape contemporary shores of Mozambique have yet to be properly told. Using Mozambican food as an 'ideoscape' (Appadurai, 1996), Dr. Maria Paula Meneses will seek to address the ways that key questions concerning memory and history have been treated (explicitly or implicitly) in analyzing the role of East Africa in the Indian Ocean (Pearson, 2003; Alpers, 2009).
