It is unbelievable as to how the WHO is labeling our Goan sausages as 
carcinogenic. We have been eating it for 500 years and now this finding. What 
the WHO does not know is that Goans down their beloved sausages with the cancer 
killer product called feni. Probably next in line will be our favourite Bebinca 
(sugar raises blood pressure!).

Let me answer my own question are perusing the Internet.

Goa sausages WILL have a cancer risk due to the following:

It is salted and therefore cured. Curing is one of the hallmarks of preserved 
meats.

Traditionally, it is smoked in kitchens with wood-burning fireplaces or hung 
over low heating sources. The meat-smoking process is another carcinogen.

So yes, definitely, Goa sausages are preserved meats within the definition of 
the WHO warning.
