Doc, I got into college on an academic scholarship. In order to keep the 
scholarship, I had to maintain a high Grade Point Average.  My 
academic adviser charted a schedule where, whenever I took a real difficult 
course, I also took a 'jock' or super easy course so that my GPA would 
constantly remain high.

As a result, every semester I had to attend courses like, "sports appreciation" 
or "music appreciation," etc. One of the few things I have retained from those 
courses is how to describe a glass on wine. 

For what it is worth, here is how you do it.

Slowly swirl the wine in your glass for a few seconds. 
Take a pause. 
Sniff on the aroma. 
Then take a small sip. 

Pause.

Declare, with authority, "Bold, but not too pretentious."
