Two things. First, there is no real way to ensure you retrieve ALL of the bookstores - or any other type of business - within an area using the Local Search API. It's just not a practical thing. And second, even if you could, using the API to crawl Google's index and build your own database is against the TOS and therefore illegal. You can use Google's results directly, and you can "clip" a handful of them for use later, but querying their index repeatedly to build your own database is out.
