This is certainly possible. The biggest challenge you will have is that there is no standardized way to include images in RSS or Atom feeds. Some will include the image url in the content/description element. Others will include it in totally different ways. So while it is possible, it will be difficult if you don't know exactly what feeds you're using and have direct control over their content.
Regardless, the process is exactly as you've described. First, pull the feed down from the Feeds API in MIXED format. Then, walk through the entries and look for the image url. Jeremy R.
