All email migration traffic to the destination Google Apps mailbox will be over port 443 (although it might use port 80 for one or two non-SSL API calls, can't say for certain). If your source server (Exchange or IMAP) is inside the firewall, that should be all you need, if it's outside you'll need to open 143 and/or 993 for IMAP and whatever range of ports Outlook/Exchange utilize (to lazy to look it up right now but Google should tell you).
