My understanding is that I'll have to update the exception entry with
the original time, am I correct ?
That means that I'll still have an exception entry that won't be
updated automatically if I update the recurrence pattern.
Any way to solve this problem ? (The only way I can think of, is to
delete all occurence exceptions, delete the recurrence itself and
recreate from scratch, assuming I have all the details).

And what about canceled occurences ?, how do I un-cancel ?, Do I have
to add a new exception with the original date as well ?

(BTW, I noticed that deleting an occurence exception, converts it to a
canceled occurence, not the expected result of removing the exception
itself)
