I've been thinking a bit about this and I think there are some tests
you can perform, which would give you a pretty good rate of success.

1. You can get a shapefile of coastlines and, whenever the word
'ferry' appears, test against that shapefile if you are on land or on
water.

2. The turns and steps of the directions, just before a ferry, and
just after a ferry, are often very small, like a few hundred feet to
the right and 0.2 miles to the left, when you are manouvering in the
harbour. Such small steps in the ends, with a longer segment in
between them, in addition to the word 'ferry' in the description,
almost certainly mean you're sailing.

3. The segments of polyline that make up the sailing route are usually
much longer than the average polyline segment on land. (unless you're
driving on North Dakota, but then again, I haven't seen any ferries
there.) :-)

4. There may be some more tests you can do, specific to your area of
coverage.
