It sounds like both a daunting and interesting project. To map a large area such as you describe will require quite a lot of work. The easiest way to do something like this would be to use the tools available at the Open Street Maps (http://www.openstreetmap.org) organization. They have easy to use tools that can take a GPS track and convert it into a usable map. Once you've mapped everything out, there are also tools available at OSM to create tiles and images that can be used on the various mapping systems, including our fabvorite, Google. There are many other ways you can do this but for cost and simplicity, the OSM route is pretty easy and of course, free.
