Rossko wins! There's a setting in the EE backend that turns on/off php/sql debugging messages. When turned off, EE treats any bracketed item not in an EE block as leftovers from error messages and tosses them. Once turned on, it all works properly. The formatting I ended up with is a way to go around the problem while the setting is still turned off.
