On Android this behavior is controlled by the device's Launcher application (i think!).
On an Android device if you click a link to maps.google.com the Launcher should know what applications are installed on the device that can handle the link and offer the user a choice of 'what application do you want to open this link with'. At the same time it'll give the user a checkbox with the option 'remember this setting'. So the user defines which application will open the link and i think there is no way for you to (programatically) make the choice. Remember not all Android devices will have the native Google Maps application installed. I have no experience of iphone so can't comment on that. Martin.
