The tooltip content is Category Series Value where we use the formatted values.
You can edit the formatted values, especially of the value cell which is unique per point, in order to choose some other text. You can also use \n in the formatted value. As for the tooltip format, see http://code.google.com/apis/visualization/documentation/gallery/barchart.html#Configuration_Optionsfor the relevant configurations options. You cannot change the style of the tooltip but rather only its size and font.
