If you have 4 or less nodes, you can fake it using the min/mid/max/noColor 
options, but that isn't likely to work for you.  Other than that, there is 
no way to do what you want.  You can make a feature 
request<http://code.google.com/p/google-visualization-api-issues/issues/list>for
 it, if you like.
