North America and South America are already different continents. As outlined here<https://developers.google.com/chart/interactive/docs/gallery/geochart#Continent_Hierarchy>, you can refer to North America as '021', South America as '005', or "All the Americas" as '019'. There have been a few complications with adding Antarctica. We'll keep trying to resolve them, but I still don't have an estimate of when this will be done.
