(The following explanation assumes you're not using maps.) When a browser visits a web page with a Google Chart, it downloads the Google Charts library over the Internet. The browser then uses the library to render the chart using the data, which in your case is being retrieved locally. Google Charts does not send your data anywhere.
So it is not a security threat.
