check that your html file has the correct content type:
<meta http-equiv="content-type" content="text/html; charset=UTF-8">

then put a breakpoint in your servlet and check if the special chars
are still ok

and make sure, to use the correct method on your form
setMethod(FormPanel.METHOD_POST)
