You should be able to go to Window > Preferences > General > Editors > File Associations and in the list on the right, choose *.ui.xml and choose between UiBinder Template Editor and WindowBuilder Editor, but it's not there. I tried clicking "Add..." and adding *.ui.xml as a new type, but it throws an assertion error in the Eclipse log.
