In GPGMail Preferences/Keys, you can set your default key using the drop
down menu under 'Default Personal Key'.

I'm sorry I can't answer your question about Services. I don't use
Services that much.

You upload them to a keyserver.

You can do that using GPG Keychain Access, Menu/Key/Send to Keyserver,
please check that you have a keyserver selected in Preferences/Keyserver.
sks-keyservers.net is my choice.

Or you can do it in Terminal: from the man pages:
- --send-keys key IDs
Finger-prints  may  be used instead of key IDs.
Option --keyserver must be used to give the name of this keyserver.
Don't send your complete  keyring  to  a keyserver --- select only those
keys which are new or changed by you.

Whichever method you chose, please be careful *not* to upload your
secret keys!
