I don't why you would like to do that, but it's your privilege.
Please consider that those two items provide useful information to the
recipients of your messages.

You have to edit gpg.conf (located at ~/.gnupg/gpg.conf), and disable
the following options, by typing the character # at the beginning of the
line where the option is located.

You can open gpg.conf with any text editor like TextEdit (part of the
OS), or BBEdit Lite (freeware), or any other text editor. After making
the changes (adding # at the beginning of the line where the option is
located), you have to save and quit.

Examples:

# emit-version
# comment
