the North Carolina sample dataset comes with a landsat mapset, and there is an extra imagery mapset for the Spearfish dataset you can download. http://grass.ibiblio.org/download/data6.php presumably the examples in the GRASS book use either of these depending on the edition. The GRASS 4 Image Processing manual linked from the i.class help page most likely uses the Spearfish extra imagery dataset.
