Hamish, I found the GUI package in the repository with the name 'grass70-gui' instead of 'grass-gui', as shown in the http://packages.ubuntu.com/search?keywords=grass
Also, the grass70.desktop, the command name should be 'grass70' instead of 'grass7'.
