AFAIK in grass there is no tool to Strahler Analisis.
I strongly suggest using TAS GIS to strahler stream order. Its free
(similar to idrisi) but no open source program. Unfortunatly it runs
only on windows (and is extremly slow when running on wine)
It has several method to create strahler analisis from dem (including
D8, Dinf, Rho, Rhoinf etc to create specific cachment area).
The comunication between grass and TAS is simple. TAS reads GRASS ASCII
raster files (do not forget run unix2dos before), and also can write
file to GRASS ASCII raster.
There also is good tutorial on Strahler Analisis.
