Problem solved! All I had to do was to modify the first line in trunk/debian/changelog file as follows:
-gregorio (1.0-1) unstable; urgency=low +gregorio (2.1-svn) unstable; urgency=low Then it all compiles and makes .deb packages with the correct version number in, thus no longer making ubuntu think it is out of date!
