Solesmes uses their own proprietary font, of which all the fonts in Gregorio are based (at least in spirit). The difference will really be in the neumatic elements that Solesmes added: the oriscus, liquescent figures, and other more obscure stuff. I don't think the fonts in Gregorio implement them exactly -- which is probably for the best, since I heard (from a monk of Saint Meinrad Archabbey in Indiana, USA) that Solemses had problems when the Meinrad fonts (used by said abbey) added liquescent forms that were too similar.
That said, I personally find the default font to look the closest to those of Solesmes (and the Antiphonale Monasticum 2005). To use the default font, don't select one specifically. I also noticed that the augmented and diminished liquescents are opposite when using the alternate fonts. However, I haven't tried this in the most current version of Gregorio, so I don't know if it's still a problem. In any case, that was the reason I initially decided not to use the alternate fonts. I can't speak to font size. I generally nudge it up and down to balance readability and compact-ness. The beauty of using a package like Gregorio is that it will automatically reformat things until you find the size you like, and then you can tweak line breaks, etc., to get everything to fit the way you want.
