Just after sending the last email, it occured to me to look again at the /usr/local/texlive/texmf-__local folder. There, in addition to the luatex folder, there was a latex folder. As it turns out, both had gregoriotex folders within them, with the luatex/gregoriotex folder at the latest SVN and the latex/gregoriotex folder containing a mixture of older and more recent files.
In fact it's very strange: that's what I thought from the beginning, but I thought it wasn't that because kpsewhich -all gregoriotex.tex didn't find gregoriotex.tex in /usr/local/texlive/texmf-local/latex/gregoriotex/ ... Or maybe the other files were there but not gregoriotex.tex? Anyway, the Mac Package should inheritate from the install.lua script of the Windows installer which removes these old directories!
I deleted the latex/gregoriotex folder, and now the compilation error mentioned in my last email went away.

Perhaps the latex folder was being given priority of the luatex folder?

At any rate, I'm happy to have the issue fixed for me, but perhaps something could be done to automate the deletion (if this is the best solution) of the latex/gregoriotex folder if someone has it from an earlier installation of Gregorio?
With the install package it should be ok, but for manual svn update, I'm not sure how to do that... I'll think about it!
