You should try putting this before any score in you main.tex :

\grechangedim{\gremaximumspacewithoutdash}{0pt}

Not tested (at least for quite a while), but as documented in the file
"gregoriotex-spaces.tex", this is

*maximal space between two syllables for which we consider a dash is not
needed. *
