I’ve made the change in
~Documents/gregorio/gregorio-svn/trunk/tex/gregoriotex-chars.tex :
line 89 to \gdef\grecclefchar{\gregoriofont\char 162}%
I’ve recompiled (with the fonts) : C clef is now ok !
