First off, which do you want: angle brackets ("⟨" and "⟩") or a less-than and greater-than sign used as brackets ("<" and ">")? The solutions are different. To wit...

The first (true angle brackets) are math-mode delimiters and as such you have to be in math-mode to enter them in TeX. To do this put "<v>$\langle$</v>" and "<v>$\rangle$</v>" in your gabc file (the "$" signals TeX to switch in and out of math-mode, the verbatim tags tell gregorio not to mess with the backslash, which it would otherwise treat as a special character).

I've found that accessing the second requires a bit of legerdemain because of font encoding. The default font encoding is OT1, which means just putting a less-than or greater-than sign in the gabc, even when enclosed in verbatim tags, results with "¡" or "¿" appearing (respectively), as you saw. To fix this there are several options:

1) Switch your font encoding to T1 by adding "\usepackage[T1]{fontenc}" to your TeX file or by switching to a font which already uses that encoding.

2) Make use of "<v>\textless</v>" and "<v>\textgreater</v>" in your gabc file. These commands will insert the correct characters regardless of encoding.

3) Access the symbols as math-mode binary operation symbols by using "$<$" and "$>$" in your gabc file. Since none of these characters is a special character for gregorio, you don't need the verbatim tags in this case.

4) Switch to the typewriter font (which uses the T1 encoding) for these characters: i.e. use "<tt><</tt>" and "<tt>></tt>" in your gabc file. These characters will be slightly different from the ones above (since they're in a different font) but the difference is not extreme.
